Blueberry muffins with buttermilk

INGREDIENTS

120 g butter , softened
180g sugar​
1 pack vanilla sugar
1 pinch of salt
½ lemon zest
2 eggs

120g buttermilk​
260 g wheat flour
2 teaspoons of baking soda
200g blueberries​
some powdered sugar for sprinkling

INSTRUCTIONS

First, mix the soft butter in a bowl using a food processor or the whisk of a hand mixer with the sugar, vanilla sugar, a pinch of salt and the lemon zest until smooth.
Next add the two eggs and stir them in one at a time for half a minute.
Then add the buttermilk and stir it in briefly.

Then flour and baking powder follow and are also stirred in briefly so that there are no more lumps.
Finally, carefully fold in the fresh blueberries. It’s best to do this with a spoon so that the blueberries don’t get crushed.
