A traditional, easy to make, English sticky toffee pudding with a sponge date cake topped with a homemade toffee sauce! Yum!
ingredients
For the date pudding:
8 ounces dried dates, pitted and chopped
1 cup boiling water
1 teaspoon baking soda
2 tablespoons butter, room temperature
1 cup packed brown sugar
1 teaspoon vanilla extract (optional)
2 large eggs
1 tablespoon molasses
2 tablespoons golden syrup (or corn syrup)
1 1/2 cups all purpose flour (gluten-free for gluten-free)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
