Sponge cake base – the best basic recipe

Ingredients

for a springform pan Ø 26 cm
6 eggs
160g sugar​
200g flour​
1 pinch of salt
½ pack of baking powder (7 g)

Instructions

Preheat the oven to 170 degrees O/U heat. To make a sponge cake fluffy and smooth, the first step is to beat the eggs with the sugar for a long time until foamy. About 15 minutes is ideal to significantly increase the volume of the mixture. To avoid cramps in your arms, I recommend using a food processor for this. But it works just as well with the hand mixer and the training is included.

The flour and baking powder are now sifted into a bowl (this is important so that no lumps form in the dough) and carefully, with a lot of love and patience, folded into the egg mixture with the salt. The best way to do this is to use a silicone dough scraper or a wooden spoon. It is important that you do this step very carefully, otherwise you will knock out the air that you previously laboriously beat under the eggs and the fluffiness of the sponge cake base will be lost.
