Shortbread Cookies With Jam

Ingredients

250 g of wheat flour
125 g of butter
1 egg
half a cup of powdered sugar
1/2 teaspoon of baking powder
2 teaspoons of vanilla sugar
1/2 cup of coconut flakes
favorite jam

Preparation

1. Cream the butter at room temperature with powdered sugar at low speed until a uniform mass is obtained. Then add the egg (also at room temperature) and beat for a few minutes.
2. Grind the coconut flakes into powder in a coffee grinder.
3. Mix the sifted flour with coconut, baking powder and vanilla sugar. Pour the mixed ingredients into a bowl with butter and egg and mix everything again until a uniform consistency is obtained. Place the prepared mass in the refrigerator for 1 hour.
4. After the time has elapsed, divide the dough into 3 parts. Put two of them back in the fridge and roll one out into a cake about 3 mm thick. Then cut out circles and place them on a baking tray lined with baking paper.
