Russian Honey Cake (Medovik)

This Russian Honey Cake – known as Medovik – is layer upon layer of sweet and creamy goodness. Made with honey, cream cheese, and a few other ingredients, this cake takes a bit effort to make but is well worth the reward!

The Cake
▢1/2 cup runny honey
▢1/2 teaspoon cinnamon, ground
▢1 teaspoon baking soda
▢1/2 cup butter, unsalted; cut into small pieces
▢1/3 cup granulated sugar
▢3 eggs
▢1 1/2 cups all-purpose flour
▢1 tablespoon cocoa powder, unsweetened (optional)
▢1 teaspoon baking powder
▢4 egg whites

The Frosting
▢1 cup condensed milk
▢1 cup cream cheese, at room temperature
▢1/2 cup butter, unsalted
▢1 cup whipping cream, 35% fat
▢1/2 cup nuts, chopped; preferably walnuts
