Egg and yeast-free potato scones are a quick and tasty appetizer, also ideal as finger food for an aperitif: soft potato scones filled with ham and cheese , cooked in a pan with a little oil.
To prepare them, simply season the boiled potatoes with salt, pepper and extra virgin olive oil, mash them and mix them with Parmesan and flour.
Once the dough is prepared, you need to prepare the focaccias, fill them and cook them in a pan for about 5 minutes per side, so you can enjoy them hot and stringy.
If the dough is too soft , you can add a little more flour. You can also vary the filling with the sausages and cheeses available . Before baking the scones in the pan, you can roll them in breadcrumbs to get a slightly crispy surface.
