These Maple and Pecan Shortbread Sandwich Cookies are the most delicious, most adorable, showstoppingly cookies ever. They are Autumn personified, or cookie-fied if you will.
INGREDIENTS
For the Shortbread:
125g unsalted butter at room temperature
200g plain flour
75g caster sugar
1tbsp maple syrup
75g pecans, finely chopped (save 25g for decoration)
For the glaze:
125g icing sugar
125g maple syrup
1tbsp melted butter
For the maple buttercream:
100g unsalted butter at room temperature
250g icing sugar
2tbsp maple syrup
milk as needed
