Lemon muffins: the recipe for soft and fragrant glazed cakes

Ingredients

Organic lemons: 2 pieces

Powdered sugar: 150 g

Flour (Type 405): 130 g

Milk: 70 ml

Cornstarch: 50g

Sunflower oil: 40 ml

Backpulver: 8 g

Eggs: 2 pieces

 

For the lemon glaze:

Powdered sugar: 80

Lemon juice: 3 tbsp

Lemon muffins are the fresh and aromatic version of the classic American muffins.

These are delicious lemon candies made from organic citrus juice and peel,

which is ideal for breakfast on the table or as a snack

perfect for a special break in the company of friends.

To prepare them, just follow the traditional

Process and pour the specified ingredients along with eggs, milk and seed oil in a bowl where you have mixed the powders i.e. flour, cornstarch, granulated sugar and baking powder. Once ready, you just have to spread the creamy and homogeneous mixture in a special mold lined with paper cups and then bake everything in the static oven at 180ºC for about 20 minutes, or until you get soft and creamy cakes. Fragrant.

For a spectacular and effective result, in our version we covered the muffins with a glaze made from powdered sugar and lemon juice and finally placed a slice of citrus fruit and fresh mint leaves on top. This gives you a pleasant variety of flavors between the sour notes of the topping and the sweet citrus taste of the dough. If you prefer, you can serve the sweets at the end of the meal as a single-serving dessert along with a glass of limoncello, or offer them for a party buffet or Sunday brunch.
