This is a delicious summer dessert, perfect for an outdoor party, a barbecue or potluck. Since you don’t have to be fancy with the slicing and serving, just scoop out a dollop, and let the imperfection be the aesthetic.
Ingredients
1 ¾ cups superfine sugar
¼ teaspoon salt
1 cup cake flour
12 egg whites (room temperature)
1/3 cup warm water
1 teaspoon almond extract
1 ½ teaspoons cream of tartar
4 cups cherries, fresh or frozen and thawed
4 tablespoons cornstarch
2/3 cup sugar
Juice of ½ lemon
1 cup heavy whipping cream
3 tablespoons confectioners’ sugar
