Grillage roll with chocolate and walnuts

filling

Beat the egg yolks, sugar and vanilla sugar well with a mixer until the mixture becomes light yellow and creamy. Steam for about 10 minutes and leave to cool completely.
Beat the cooled egg yolks with butter at room temperature, divide the mixture into two parts, add the grillage to one part.

and in the other melted chocolate.

Apply the grillage filling on the crust and leave it in the freezer for 15 minutes.

During this time, leave the chocolate filling in the refrigerator.

Spread the chocolate filling on top of the grillage filling.

 

Slowly separate the roll from the edge of the paper and twist the roll so that we twist the crust while separating the paper.
