A creamy mushroom soup with parmesan and pasta!
ingredients
1/2 ounce dried mushrooms (optional)
2 tablespoons butter (or olive oil)
1 onion, diced
1 pound mushrooms sliced or diced
3 cloves garlic, chopped
1/2 teaspoon paprika
1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme, chopped)
1/2 teaspoon dried dill (optional)
6 cups beef broth (or chicken broth, or vegetable broth for vegetarian)
1 teaspoon Worcestershire sauce (optional) (gluten-free for gluten-free)
1 teaspoon soy sauce (optional) (gluten-free for gluten-free)
8 ounces pasta
1/2 cup sour cream (or heavy/whipping cream)
1/2 cup parmigiano reggiano (parmesan), grated
salt and pepper to taste
