Baked Custard Bun (Cream Pan)


▢ 1 teaspoon vanilla paste or extract
▢ 1 tablespoon unsalted butter

Dough

▢ 250 g bread flour, 2 cup
▢ 50 g cake flour, ⅓ cup
▢ 30 g sugar, 2 tablespoon
▢ 20 g condensed milk , 1 tbsp, can be replaced with honey
▢ 80 g cold water, ⅓ cup
▢ 80 g cold milk , ⅓ cup
▢ 1 egg, whisked
▢ 1 teaspoon instant yeast, ideally saf instant yeast
▢ ½ teaspoon sea salt
▢ 30 g unsalted butter, 2 tbsp, cut into 4 -6 small pieces

Optional decoration

▢ pearl sugar
