The autumn cake is a soft and delicious dessert, prepared with a rich and juicy dough based on typical autumn fruits, both fresh and dried.
Grapes, apples, walnuts, almonds and dried figs make the cake truly irresistible, perfect for breakfast and as a snack , perhaps accompanied by a steaming cup of tea. Quick and easy, prepared in a few minutes by mixing all the ingredients and without butter, therefore very light and genuine.
The autumn cake can be made with different types of flour , such as wholemeal, type 1 or 2, oat or spelt. You can use fresh figs, black or white grapes, pears, raisins, dates or dried plums, respecting the total amount of fruit indicated.
You can use the oilseeds you have at home, such as pine nuts, walnuts, hazelnuts and almonds, and, to make the dessert even more delicious, you can even add some chocolate chips .
Instead of fresh cream cheese, you can also use well-drained cow’s milk ricotta to achieve an equally soft and delicious result.
