“Yummy” Honey tea cake

  1. Step 1

    Line a 23-25 cm square cake tin with grease-proof baking paper. Pre-heat oven to 180c (360F). Melt butter, sugar and honey in a microwave at 15 second blasts of power. Do not let it boil, give it a good stir and set aside to cool.

  2. Step 2

    In another bowl mix flour and baking powder. When the honey, butter sugar mixture is cool, add lemon juice and the vanilla extract and stir it to bombine. Add this mixture to the flour then the beaten eggs and stir until nice and smooth. Pour the mixture into the lined baking tin and bake for 15-20 minutes until the skewer inserted in the middle is perfectly clean.

  3. Step 3

    When the cake is done, place the tin on a cooling rack, allow to cool for about 10 minutes before slice it into evenly sized pieces. Sprinkle with icing sugar. Then invite your friends over for a cup of tea and cake. Enjoy.
