Winter Cake with Lemon, Orange and Almond

Preparation of the cake: Preheat your oven to 180°C. Whisk together the sugar and eggs until the mixture is white and airy. Incorporate the melted butter, then add the zest and juice of the lemon and orange. Beat everything well.
Dry mix: In a bowl, mix the flour, baking powder and almond powder.
Assembly: Add the dry mixture to the wet mixture and beat well to obtain a smooth dough. Pour the dough into a previously buttered cake tin.

Cooking: Bake the cake for 45 to 60 minutes. Check the cooking by inserting the blade of a knife – it should come out clean. Let the cake rest for 15 minutes, then turn it out onto a wire rack to cool.
To make the icing: Mix the icing sugar with enough lemon juice to obtain a consistency that is neither too runny nor too thick. Pour the icing over the cooled cake and let it set for about an hour.

This cake is ideal for breakfast or a winter snack.
You can adjust the amount of juice in the frosting to your taste.
