Wholemeal bread is a sourdough product rich in fibre , the rustic version of the classic bread. It is prepared with wholemeal flour, water, yeast, sugar, salt and extra virgin olive oil, simple and genuine ingredients which, together with respect for the resting times, ensure a soft and fragrant result.
To prepare it, the flour, the warm water in which the brewer’s yeast has been dissolved and the sugar are mixed by hand, then salt and extra virgin olive oil are added. The dough obtained, smooth and homogeneous, is subjected to a double leavening : first in a bowl covered with a transparent film, then in the appropriate rectangular mold for loaf bread or, if you don’t have one, in one for plum cake.
Once it has doubled its original volume, simply brush the surface with a drop of milk, sprinkle with aniseed or your favorite seeds (sesame, pumpkin, sunflower…) and bake at 180 °C for 35 minutes. To ensure that the oven has the right humidity necessary to produce a soft and light product, you can leave a pan filled with water on the bottom during cooking.
You will thus obtain a loaf with a thin crust and dense honeycomb, perfect for breakfast with butter, honey, jams and spreads, for preparing toast, sandwiches, savoury canapés for a tasty aperitif and much more. You can also cut it into slices, toast it in the oven for a few minutes and accompany it with soups, veloutés and traditional side dishes instead of homemade bread at any family lunch or dinner .
