This cheesecake is an almost perfect copy of the Cheesecake Factory White Chocolate Raspberry Cheesecake. Only better because it’s homemade 😉

Ingredients

For the base:
300g Oreo biscuits (or similar chocolate biscuits), finely chopped
40g butter, melted

For the filling:
900g cream cheese, room temperature
60g sour cream, room temperature
100g sugar
1 tbsp cornstarch

2 tsp vanilla extract
3 eggs (M), room temperature
120g white chocolate, chopped
100g whipped cream
120g raspberry jam (without seeds)

For decoration:
200g whipped cream
2 tsp powdered sugar
1/4 tsp vanilla extract
grated white chocolate (optional)
