Tortellini Timbale: the perfect starter recipe for special occasions

The tortellini timbale is a spectacular and rich first course , perfect for special occasions. A treasure chest of pasta brisée contains a rich filling of tortellini and ham and peas, for a perfect dish for Sunday lunch , a dinner with friends or a special occasion.
Despite the apparent complexity, it is a very simple recipe: in our version, the tortellini are boiled and sautéed with the seasoning of peas and diced cooked ham, previously sautéed in the pan together with a sauce of oil and onion; they are then distributed in the brisée dish, placed in a springform pan and sprinkled with plenty of homemade béchamel sauce and grated Parmesan.
All you have to do is prepare the topping with another disk of dough, garnished with stars made with a special mold, brush everything with an egg yolk and a drop of milk, then sprinkle generously with chopped pistachios .
Once baked in the oven, you will have a super tasty dish with a crispy crust and enveloping interior that will surprise your guests.
To optimize the time, we used ready-made shortcrust pastry, easily available in the refrigerated section of the supermarket, but you can also make it at home following our advice, or replace it with puff pastry or savory shortcrust pastry.
Depending on what you have available, you can make different variations : with ragù of meat or vegetables, with smoked scamorza instead of béchamel for an irresistible stringy note, or with tortellini stuffed with ricotta and spinach for a vegetarian dish.
If there are any leftovers, we recommend storing them in the refrigerator for a maximum of 2 days , tightly closed in an airtight container. Freezing is not recommended.
