Tiramisu Cheesecake Recipe

Ingredients

  • 14 chocolate wafer cookies
  •  cup buttermelted
  • 10 ounces cream cheeseroom temperature
  • 8 ounces mascarponeroom temperature
  • 1 ¼ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 tablespoon powdered gelatin
  • ¼ cup water
  • 4 ounces strong coffeechilled
  • 2 tablespoons coffee-flavored liqueur or rumif desired
  • 10 – 12 ladyfingers
  • 2 tablespoons cocoa powder

Instructions 

  • Place the chocolate cookies into a food processor and pulse until a fine consistency. Drizzle in the melted butter and process until the crumbs start to clump together.
  • Cover an 8 – inch springform cake pan with parchment paper. Press down the crumbs into the pan, and place in the fridge for 10 minutes.
