Tasty Cauliflower Meatballs – Fasting Recipe – Savory and filling meatballs, worth a try

preparation:

Break the cauliflower into florets and bring a large pot of salted water to a boil.
Transfer the cauliflower to the pot and cook for 3 minutes.
Drain the cauliflower and let it cool.
For the sauce , finely chop 1 avocado and add 1 teaspoon of vinegar and 6 chopped pickles.
Add 70 ml yogurt, season with salt and black pepper to taste and mix until well combined. For an intense taste, let the sauce chill in the refrigerator for 20 minutes.
Grate the cooled cauliflower. Transfer to a bowl and add 2 tbsp psyllium bran, 100g ground almonds, salt, black pepper, chopped green onion, chopped garlic cloves.
Mix until combined and set aside for 10 minutes.
With wet hands, form into balls and press gently to flatten into meatballs. Place the meatballs in a lightly oiled pan.

Fry over medium heat, covered with a lid, for about 3-5 minutes or until the bottom is golden. Turn to the other side and fry for another 3-5 minutes.
