Ingredients
For the cream:
8 eggs size M separated!
200 g whipped cream
150 g sugar
150 g soft butter
For the two floors:
8 egg whites From the eggs of the cream!
100 g sugar
100 ground almonds with skin
100 ground almonds with skin
75 g almond flakes
Instructions
For the cream:
Separate the eggs and refrigerate the egg whites.
Bring the cream and 150 g sugar to the boil and remove from the heat.
Using a whisk, stir about β
of the hot cream into the egg yolks in a thin stream (be careful: it curdles quickly!).
