Super Moist Red Velvet Cake

Directions

Preheat oven to 325 degrees F. Grease and place square parchment paper in two 9×9 dishes.
Combine dry ingredients in a medium bowl and set aside.
Boil water and remove from heat. Add coca powder and stir. Set aside.

Using a mixing bowl combine sugar, butter, oil and eggs and stir till combine. Add in buttermilk, vanilla extract and food coloring and mix together. Add in white vinegar and cocoa water, whisk together.

Add 1/2 cup of flour at a time and whisk batter till flour is fully combined.
Pour half batter in each prepared dish. Bake for 25-30 minutes. Mine baked exactly for 28 minutes. Cake will feel very soft. Let cool for 10 minutes and flour cakes on to cooling rack to fully cool.

Make cream cheese frosting or buy. We made ours. Beat 1 block of 8 oz. softened cream cheese, 2 sticks of softened butter, 4 cups of powder sugar, 1 tsp of vanilla extract and 2 tbsp of heavy cream till smooth.
Frost first layer of cake, put second layer of cake on top of bottom layer and frost top. Cut sides of cake and crumble so cake topping on top of the cake.
