4 boneless, skinless chicken breasts

2 cups fresh spinach: Roughly chopped
1 cup (100g) shredded mozzarella cheese

2 cloves garlic: Minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper: To taste

For the Coating:
1 cup (120g) all-purpose flour
2 large eggs: Beaten
1 cup (100g) breadcrumbs

1/2 cup (50g) grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
Optional Sauce:
1 cup marinara sauce: Warmed

Instructions

1. Prepare the Filling
Sauté Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped red bell pepper and cook for 3-4 minutes until softened. Add the minced garlic and spinach, cooking until the spinach is wilted. Season with salt and pepper. Remove from heat and let cool slightly.
