Strawberry, Whipped Cream and Mascarpone Cake Recipe

Method of preparation:

Preparation of the Top:
In a large bowl, beat the eggs with a pinch of salt and sugar for 8-10 minutes.
Add the flour mixed with the baking powder, mixing until you get a homogeneous composition.

Spread the dough evenly on a greased tray and bake in a preheated oven at 180°C for 12 minutes.
Cut the baked cake in half and spread half of the cake on the baking sheet with 4 tablespoons of strawberry jam.
Preparation of the Cream:
In a bowl, beat the cream with the vanilla sugar.
In another bowl, beat the mascarpone with the powdered sugar and lemon zest, then mix with the cream.
Soak the gelatin sheets in water for 10 minutes and prepare the gelatin according to the instructions.
Assembling the Cake:
Spread the cream on the top spread with strawberry jam and cover it with the other half of the top.
Spread the surface of the top with strawberry jam and decorate with strawberries cut in half.
Preparing the Glaze:
In a bowl, mix the water with the gelatin and the sugar.
Heat the mixture for 1 minute, then let it cool for 5 minutes and pour it over the strawberry slices.
