Squares with Dried Fruits and Two Chocolates

Preparing the nuts : Place the mixed nuts in a kitchen chopper and grind them coarsely. Then transfer the mixture to a bowl.
Mixing with honey : Add the honey to the crushed nuts. If the honey is too thick, heat it slightly over low heat in a saucepan to make it more liquid. Mix well with a spatula or wooden spoon.

Assembling the base : Line a 30 x 20 cm rectangular pan or a 24 x 24 cm square pan with baking paper. Pour in the walnut and honey mixture. Spread evenly over the entire surface and flatten with the bottom of a glass or your hand.

First layer of chocolate : Melt the white chocolate in a bain-marie over very low heat. Once melted, pour it over the nut mixture in the mold and spread evenly over the entire surface. Sprinkle with golden sesame seeds and place in the refrigerator for 1 hour 30 minutes.

Second layer of chocolate : Remove the mold from the refrigerator. Place another parchment paper, larger than the first, on top and turn the mold over to unmold the preparation. Melt the dark chocolate in a bain-marie. Once melted, pour it over the unmolded side of the preparation, thus forming the second layer of chocolate.

Finishing and refrigeration : Sprinkle again with sesame seeds. Refrigerate for an additional 1.5 hours.
Cutting : Remove from refrigerator and cut into squares of desired size.
