Spoon zucchini cakes: quick and easy to prepare!

Spoon zucchini fritters are a delicious way to incorporate more vegetables into a meal. Not only are they quick and easy to make, but they’re also a great way to use up leftover vegetables lurking in the fridge.
To make these crispy fritters, you’ll need eggs, zucchini, flour, baking powder, cheese, and chopped ham. You simply grate the vegetables and mix them with the other ingredients to form a thick batter.
With the help of spoons, the batter is deep-fried in hot oil until golden brown! Each bite is crispy on the outside and soft and tender on the inside. Yummy! They’ll be a hit among the pickiest eaters.

Eggs – use large, free-range eggs
Zucchini – use large fresh zucchini (no need to peel first)
Flour – use all-purpose flour or gluten-free flour
Milk – can be substituted with almond or soy milk
Baking powder – acts as a leavening agent in the fritters
Cheese – use cheddar, Swiss cheese, or Monterey Jack
Ham – use chopped cooked ham (or crispy bacon works too!)
Seasoning – salt and pepper will do (add a pinch of cayenne pepper if you prefer heat)
Oil – use a neutral oil suitable for frying at higher temperatures, such as canola, peanut, sunflower, or corn oil
How to Store Zucchini Cakes
Store leftover fritters in the refrigerator for up to 3–4 days. Reheat in the air fryer or oven (for a crispy texture). You can reheat them in the microwave, but they won’t stay as crispy.
