Sponge cake with lemon cream

2 packets of cream stiffener
500g mascarpone
100 g icing sugar

1 lemon (zest + juice)
3 eggs
150 g sugar
1 tbsp vanilla sugar

75 ml water
1 lemon (juice)
75 g flour
75 g starch
60 g melted butter
