Spicy mini doughnuts: the recipe for fried appetizers with a thread-like and delicious filling

Savoury mini doughnuts are the delicious version of sweet doughnuts, ideal to start a lunch or dinner with friends. They are small fried snacks that are very popular in Tyrol and in some areas of Trentino, where they are also called “crafeni”: golden yellow and fragrant, they are made from a yeast dough made with flour, parmesan cheese, boiled potato purée, eggs and butter. They are soft and contain a chewy fontina cheese filling.
Preparing them at home is very simple: we used a planetary mixer, but you can also easily process the ingredients by hand. The smooth and soft dough thus obtained is first left to rise until it has doubled in volume , then carefully rolled out into a not too thin layer and cut out with a 5 centimetre diameter cutter . The discs are filled with cheese cubes and, after a second rise, fried in plenty of hot seed oil until golden brown.
The result is small, soft doughnuts with a creamy core, capable of conquering the palate of even the most demanding guest. They are perfect as an appetizer but can also be offered as finger food to be enjoyed at the aperitif along with other delicious appetizers and a glass of frozen Prosecco on your fingertips.
