Ingredients
For the apple filling:
4-5 apples e.g. Jona Gold or Elstar
1 tbsp lemon juice
40 g brown sugar
1 packet of vanilla pudding powder for cooking
100 ml apple juice
1/2 tsp cinnamon
For the ground:
250 g butter speculaas biscuits
100g butter
For the cream:
250 g low- fat curd cheese
150 g cream cheese
100g mascarpone
100 g cream
1 tsp vanilla extract
50 g sugar
For decoration:
12 butter speculaas biscuits
Instructions
For the filling:
Peel apples, core and cut into small pieces.
Simmer apple pieces in a pan with lemon juice, a dash of apple juice and brown sugar until soft.
