Soft fruit tart: the quick and easy recipe for the colorful dessert

The soft fruit tart is a soft, colorful and delicious dessert , a variant of the classic shortcrust pastry tart, perfect for a birthday party, as a snack or as a happy ending to a Sunday family meal.
It melts in the mouth and is perfect for filling with rich creams and seasonal fruits: the glossy appearance given to it by the gelatin applied to the surface makes it spectacular and satisfying.
It consists of a soft base that is ready in a few minutes and is prepared with a pair of electric whisks and a special clever mold, with a slightly raised bottom and a grooved interior.
If you don’t have one, you can use a cake mold with a diameter of 22 centimeters and place in the center, upside down, a deep ceramic plate , stable and suitable for high temperatures. Whichever mold you use, don’t forget to butter and flour it well to make the tart easier to make.
Then proceed as described in the recipe, beating the sugar, butter, eggs, flour and milk to obtain a cake with a soft doughnut-like consistency, moistened with a liqueur or non-alcoholic syrup. All you have to do is fill it with a custard and decorate it with mixed fruits , spread a thin layer of gelatin on top so that it does not turn black and put everything in the fridge for at least 1 hour.
You can keep it in the fridge, well covered or sealed in an airtight container, for a maximum of 2 days.
If you want, you can customize it with winter or summer fruit varieties, depending on availability; to obtain a more elegant final effect, vary the cuts, making segments, rounds or slices, leaving the smaller fruits whole.
In addition, you can fill it with diplomat cream, a mousseline or a white chocolate ganache and garnish it with mint leaves for an extra touch of freshness : you will bring to the table each time a tart that is always different, a real, soft delicacy that will delight both adults and children.
