preparation:
In a bowl, beat the eggs together with the castor sugar, the vanilla and a pinch of salt, until smooth. We incorporate the oil, the milk and then we also incorporate the sifted flour in 2-3 installments, mixing until homogeneous after each installment. At the end we also incorporate the vinegar.
We transfer the composition to a pan greased with butter and put it in the oven preheated to 180 degrees, for 40 minutes or until it passes the toothpick test.
After baking, let it cool down a bit, then transfer it to a plate and spread it with fruit jam. Sprinkle the coconut flakes on top. We portion it only after it cools down completely.
