So delicious refreshing lemon cake

juice and pulp of 2 lemons
– 125 ml of oil

For icing :​​​

– juice of 1 lemon
– 4 tablespoons of icing sugar

Preparation for Refreshing Lemon Cake
Mix the sifted flour with the yeast, add the sugar.

On the other hand, beat together the eggs, cottage cheese, zest, juice and pulp of the lemons with the oil.

Incorporate this preparation into the first and mix until you obtain a homogeneous paste.

Pour the dough into a mold and bake in an oven preheated to 180°C (thermostat 6) for around 40 minutes, until the top turns golden brown.

Let cool for 1 hour. Prepare a syrup by mixing the icing sugar with the juice of the last lemon over low heat.

Brush the entire surface of the cake with this syrup using a brush.

Let sit in the refrigerator for at least 30 minutes until ready to serve.
