Directions:
Make the caramel: In a pan, heat the sugar over medium heat until it melts and turns into a golden-brown caramel.
Be careful not to burn it. Once the caramel is ready, remove the pan from the heat and transfer the caramel to a bowl immediately to stop the cooking process. Allow it to cool and harden slightly.
Prepare the pudding mixture: In a separate pan, heat the milk and reduce it by half. Let it cool slightly. In a bowl, whisk 2 eggs. Then, gradually add the reduced milk to the eggs, whisking continuously to combine.
Combine and strain: Pour the egg and milk mixture over the hardened caramel in the bowl. Strain the mixture to ensure a smooth texture.
Steam the pudding: Cover the bowl with a lid or aluminum foil. Place the bowl in a steamer or a pot with a steamer insert. Steam it for about 30 minutes.
Serve: Once done, remove the bowl from the steamer and let the pudding cool. To serve, you can invert the pudding onto a plate so the caramel is on top.
