Shepherd’s Pie recipe: How to make it perfect!

METHOD
Boil potatoes until tender.
Sauté the onion and cook for 2-3 minutes, add the crushed garlic and chopped carrots, add the minced lamb and cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme.
Add tomato paste and flour and stir. Add beef broth and peas. Bring to a simmer, reduce heat and cook, stirring occasionally, until sauce thickens. When the potatoes are finished cooking, drain the water. Add butter, milk, egg yolks, salt and pepper. Puree the potatoes until smooth.
Preheat oven to 400F (200C).
Layer the meat mixture in an ovenproof dish. Spread the puree over the meat mixture. Bake for 20-25 minutes. or until the mashed potatoes are golden brown.
