How to prepare puff pastry with lemon ricotta
Mix ricotta with lemon zest, vanilla extract and sugar. Obtain a creamy and homogeneous mixture.
Cut the puff pastry into 6 squares. Cut strips down the middle of each square and then fold them.
Place a teaspoon of ricotta cream on each rectangle. Fold two sides toward the center to open the puff pastry.
Transfer them to the baking tray and moisten them with milk. Sprinkle the sugar on top.
Cook them in a static oven at 190°C for 20 minutes.
Decorate the puff pastry with powdered sugar and serve.
Advice
If you want, you can refine the ricotta filling with candied fruits. You can also vary the filling as you wish and replace the ricotta with custard or the sweet cream of your choice.
