Savory Cheese and Spinach Pie – Goes right out of the pan, it’s way too good – Spanakopita Greek Pie

preparation:

Preheat the oven to 180 degrees C.
Prepare the filling: heat 2 tablespoons of olive oil in a large pan. Add the chopped onion and cook over a medium heat until golden, add the spinach and cook for 5-7 minutes, until the spinach softens.
Drain off excess liquid and transfer to a large bowl.
Crumble the feta and ricotta into the bowl, then add the scallions, parsley, dill, lemon zest and spices. Mix until well combined and set aside.
Assembly: grease the bottom of a 22X33cm rectangular pan or a 28cm round pan with olive oil. Place a sheet of dough in the baking pan so that some of the dough hangs over the side.
Brush with olive oil. Add 2-3 more sheets in the same way, brushing them with olive oil between each layer.
Spread the spinach and feta filling evenly over the greased sheets.
Cover with 3 layers of pie sheets, brushing each sheet with olive oil. Fold the excess over the sides and brush the top layers with olive oil.
Using a very sharp knife, cut the pie into rectangles or any other shape.
Bake the pie for 40-45 minutes or until golden. Allow to cool for 15 minutes before serving.
