Apply some filling to half of the cookies using a piping bag. Place the remaining slices as a lid on the filling and press down lightly.
Spread the apricot jam and desiccated coconut on a plate. Roll the filled cookies first through the jam, then through the coconut flakes.
Finally, use a piping bag (e.g. from Toppits) to pipe some strawberry jam in a dot shape onto the top of each cookie.
