Rocky Road Brownies

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

For the Topping

  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium saucepan, melt the butter over low heat. Remove from the heat and stir in the sugar, eggs, and vanilla until well combined.
  3. Sift together the cocoa powder, flour, salt, and baking powder. Gradually add to the wet ingredients, stirring until just combined.
  4. Pour the batter into the prepared pan, spreading it evenly.
  5. Sprinkle the top of the batter with mini marshmallows, chopped walnuts, and chocolate chips.
  6. Bake for 30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Allow the brownies to cool in the pan before lifting out the parchment paper and cutting into squares.
