Ricotta Spinach Focaccia Bread: The recipe for a soft and delicious savoury sourdough bread

Step 1

Place milk, water, yeast and sugar in a bowl and stir until the dry ingredients have melted.

Then add the oil and whisk until a slightly milky liquid is formed.

Add flour and salt and continue stirring with a whisk. When a dough forms, knead it with your hands until it is smooth.

Form a ball of dough, place it in the bowl, cover with the cling film and let it rise for about 2 hours or until it has doubled in volume.

When the time is up, press the gas out of the dough and place it on the baking tray lined with baking paper. Press it flat with your hands and cover with a cloth. Leave to rise for another 20 minutes.

In the meantime, put the ricotta, cooked spinach, olive oil, salt, pepper and an egg white in a bowl and mix everything with a spatula until you have a homogeneous mixture.

After the additional 20 minutes of rising time, take the dough and make holes using the ice cube tray.

Fill each hole with a spoonful of the prepared filling. When you’re done, brush the dough with an egg wash.
Step 9
Sprinkle a generous amount of grated cheese on each portion of filling, then place in the oven and bake at 190°C (375°F) for 40 minutes.
Step 10
Once the focaccia bread is baked, let it cool slightly, then cut it into squares and serve on a serving platter. Enjoy!
