The ricotta and lemon tart is a simple and delicious dessert that is perfect to offer your guests to end the meal. This is the perfect mix of lemon and ricotta tart: a shell of fragrant buttery shortcrust pastry houses a filling of fresh ricotta, sugar, eggs, lemon peel and juice, which, once baked in the oven, has a soft and melting consistency on the palate.
For a perfect result , it is important that the butter is soft and the egg is at room temperature: the dough is worked quickly with the fingertips to avoid overheating and, after half an hour of rest, spread out in a thin layer and place in a 20 cm cake tin, butter and flour it. Then spread the filling, arrange the classic stripes on the surface and bake the tart in a static oven at 180 °C for 30 minutes.
The result is a delicate and fragrant dessert that is best enjoyed when left to rest for a few hours: you can therefore prepare it in advance and, once cooled, keep it in the fridge until serving. It is ideal for breakfast along with a glass of freshly squeezed juice or at tea time as a real snack for the whole family.
For an even tastier variant, you can add white, dark and milk chocolate chips , chopped dried fruit, black cherries in syrup or crumbled amaretti biscuits to the filling.
To ensure impeccable success, make sure the ricotta is very fresh and well drained of the whey. If you prefer a stronger flavor, you can also opt for sheep’s milk : in this case, we recommend sifting it through a food mill or a fine-mesh sieve before proceeding with the recipe.
