A classic of French patisserie: Paris Brest with a delicious hazelnut praline buttercream. Maybe not prepared in 5 minutes, but the work is worth it! 😉

Ingredients

For the hazelnut paste:
60g hazelnuts
60g sugar
1 tbsp water

For the crème mousseline:
250 ml milk
4 egg yolks (M)
2 tablespoons sugar
1 tablespoon cornstarch
200g soft butter

For the choux pastry:
100 ml milk (3.5%)
100 ml water
1 tbsp sugar
1 pinch of salt
90g butter
100g flour (type 550)
3 eggs (M), plus one more if necessary

some milk for brushing
2 – 3 tablespoons almonds, sliced
​​several ice cubes

some powdered sugar for serving
