Oatmeal Carmelitas

  • In a medium bowl, add the flour, oats, brown sugar, baking soda and salt. Whisk to combine, then pour the melted butter all over the top. Stir together to combine everything.

    Press half of this oat mixture into the bottom of the prepared pan. Bake for 10 minutes. Remove from oven. (Keep the oven on.)

  • Sprinkle the chocolate chips evenly all over the baked crust, then pour melted caramel all over the tops of the chocolate chips. Sprinkle the remaining oat mixture over the top of the caramel. (It does not need to fully cover it.)
  • Bake for 18 minutes, or until top is light golden-brown. Remove from oven and let cool completely before cutting into bars.
  • Notes

    This recipe makes 9 large bars or 18 small bars.
