New York cheesecake without carbohydrates

Turn off the oven, but leave the cake in the oven for another hour, the door must remain closed! Then take the cake out, let it cool down and (very important) put it in the fridge for at least 6 – 8 hours. Then the cream will really solidify, so don’t be surprised if it seems a little soft beforehand.

Before serving, the cake should be put out an hour in advance so that it is at room temperature. This is how it is creamiest!
