MOUSSE CUBES WITH CHOCOLATE AND ORANGE

Ingredients

For the biscuit:

– 180 g of butter
– 100 g of cooking chocolate
– 4 eggs
– 100 g of sugar
– 4 tablespoons of strong flour
– 1/2 bag (6 g) of baking powder

For the orange mousse:

– 2 eggs
– 100 g sugar
– 350 ml orange juice
– zest of 1 orange
– 1 bag (10 g) gelatin
– 300 ml sweet cream

For the chocolate mousse:

– 2 eggs
– 50 g of sugar
– 200 g of cooking chocolate (with as much cocoa as possible)
– 500 ml of sweet cream

For the glaze:

– 100 g of cooking chocolate
– 50 g of butter
– 3 tablespoons of oil
– 1 tablespoon of water

Preparation

Biscuit:

Melt the butter and chocolate, broken into cubes, in a steamer, or in a pan on the lowest heat. Leave to cool. Separate the whites from the yolks. Beat egg yolks with sugar until foamy with a mixer until the mixture turns white.

Add the cooled chocolate with butter and once again mix everything well with a mixer. Then add flour mixed with baking powder and mix everything together.

Wash the beaters and beat the egg whites with a pinch of salt. With a spatula, gently mix the snow into the chocolate mixture and combine. Lightly oil and flour a 30×20 cm baking sheet, then pour the mixture and bake in a preheated oven at 180 degrees for about 20 minutes.

Orange mousse:

For the orange cream, mix the gelatin with 4 tablespoons of cold water and let it swell. Mix the eggs, sugar, orange juice and grated zest with a wire, then place the container on the steam and cook, stirring constantly with the wire, until it starts to thicken, about 15 minutes. Remove from the heat and add the gelatin dissolved on the lowest heat.

Mix well and let it cool. Separately, whip the sweet cream into the whipped cream, being careful not to overbeat it, then gently mix it into the lukewarm cream with a spoon. Spread the cream evenly over the biscuit and put it in the fridge while you prepare the chocolate cream.

Note: You can use freshly squeezed orange juice or store-bought, although the cream will certainly be tastier with natural fresh juice.
