The meat and eggplant roll is a tasty and succulent second course , ideal for a Sunday lunch with the family or a special dinner in the company of guests.
This is the richest and most elaborate version of the vegetarian eggplant meatloaf, prepared here with a mixture of minced veal and a dark filling of cooked ham and cheese, perfect for pre-cooking and then heating in the oven just before serving.
To do this, simply cut the elongated eggplants into thin slices about 1/2 cm thick, grill them on a hot plate and then place them slightly overlapping on a sheet of baking paper to form a rectangle.
The minced meat, previously mixed in a bowl with the eggs, stale breadcrumbs, chopped garlic, chopped parsley and grated Parmesan, is then spread over the vegetable rectangle and finally filled with slices of cooked ham and smoked scamorza .
Once you have formed a cylinder, all you have to do is bake it for half an hour at 180 °C, wrapped in baking paper, and then leave it uncovered for another 20 minutes: the result is a delicious stringy bun to serve, warm or at room temperature, with a side salad or with a more indulgent portion of baked potatoes : it can be kept in the refrigerator in an airtight container for a maximum of 2 days .
If you then want to replace the scamorza with slices or provola, choose for the filling your favorite ingredients such as bresaola, mortadella, Milanese salami, but also roasted peppers or sautéed zucchini, which you will incorporate in small pieces into the meat mixture.
For a more aromatic result, you can moisten the stale breadcrumbs with a drop of white wine and then squeeze them gently, or add a mixture of spices and aromatic herbs according to personal taste.
