Lemon plum cake is the aromatic and citrusy version of the classic yogurt recipe. A soft and fragrant dessert from the cupboard, ideal for dipping at breakfast in a glass of latte macchiato or to serve at tea time as a healthy and genuine snack , also suitable for children.
To put it on the table, we recommend that you get some sweet, juicy and chemically untreated organic lemons , so that you can eat them whole with peace of mind.
Once you have beaten the eggs with the granulated sugar using an electric whisk, simply add the juice and grated peel of the citrus fruit to the light and foamy mixture obtained, pour in the water and seed oil and then add the flour and cornstarch , sifted with baking powder .
The dense and creamy mass is then poured into a plum cake tin, lined with baking paper, sprinkled on the surface with crunchy sugar grains and then baked in a hot oven at 175 °C for just under an hour.
The result is a tall, soft dessert with a distinctive flavor that can be served as a happy ending to a meal along with a dollop of crème anglaise or for brunch with friends along with savory waffles, pancakes with maple syrup, and avocado toast.
