The terms “apple turnovers” and “apple pie” are often used interchangeably. In the 18th century, these apple and flaky pastries were called “puffs,” and in 1874, Cassell’s Dictionary of Cookery referred to them as “fruit pies.” In 1902, a recipe for “apple turnovers” appeared in Mrs. Rorer’s New Cookbook, and the name has stuck ever since!
Tips
If you are preparing a large batch of desserts, place the apple slices in a bowl of cold water with a splash of lemon juice to prevent them from turning brown.
Use firm, tart apples – Honeycrisp, Gala, Fuji or Granny Smith are all suitable.
The dessert can be dusted with powdered sugar before serving. Alternatively, you can try a cream cheese frosting: Mix together 4 ounces of cream cheese at room temperature, 1/2 cup of powdered sugar, 1 sifted teaspoon of pure vanilla extract, and 3 to 4 tablespoons of milk.
The dough should be completely thawed so that it is still pliable but cold. It is best to let it thaw overnight in the refrigerator rather than leaving it on the counter at room temperature. If the dough is too warm, it will not rise enough.
