Khachapuri, Georgian cheese bread

Adjarian Khachapuri, Jachapuri or Khachapuri, a very good Georgian cheese bread with eggs, a very popular culinary specialty especially in Street food . It seems that it is the ancestor of Pizza to check!

INGREDIENTS

Dough
500 g of T45 flour
20 g of fresh baker’s yeast
1 pot of plain yogurt 125 gr

1 pot of yogurt lukewarm water + or – depending on the absorption of the flour
1 whole egg
10 gr of salt
10 gr of sugar
3 tablespoons olive oil

The filling
350g of grated mozzarella
300g feta cheese
Salt and pepper

4 whole eggs
The gilding
1 egg
White and black sesame seeds optional

INSTRUCTIONS

Dough
In the bowl of a stand mixer fitted with the dough hook or in a large salad bowl, place the flour, sugar, salt, olive oil, whole egg and yogurt at room temperature, and lukewarm water.
