Juicy lemon coconut cake

Instructions

Step 1

Preheat the oven to 180 degrees top/bottom heat. Grease the loaf tin and dust lightly with flour.

Beat butter, sugar, vanilla sugar and salt until creamy. Add each egg one at a time and mix for one minute each.

Grate and squeeze the lemons. Add to the dough.

Mix the baking powder, flour and coconut flakes. Stir into the dough with the yoghurt.

Step 2

Spread the dough into the tin. Then bake for 45 minutes and allow to cool.

Turn out of the tin. Mix icing sugar and lemon juice to make a thick icing and spread it over the cake. Sprinkle with coconut flakes.
