Jam filled cupcakes

Preparation

Preheat the oven to 180°C (350°F) and prepare a cupcake tray with paper liners.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, cream together butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla.
Add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix until well combined, but do not overmix.
Fill each cupcake tin about 2/3 full with the batter.
Bake the cupcakes in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Once the cupcakes are completely cooled, you can use a small knife or apple corer to make a hole in the center of each cupcake.
Fill each hole with jam of the flavor of your choice.
To prepare the frosting, beat the butter until light and fluffy. Gradually add the powdered sugar and milk and mix until the desired consistency is reached. Add food coloring if needed.
Cover the cupcakes with the frosting using a piping bag or spatula.
Decorate the cupcakes as desired with additional elements, such as sprinkles, sprinkles or fresh fruit.
